Sure Shamrock Shakes are great, but I don’t want my toddler (or myself!) eating that much sugar or green food dye. No one likes green pee! I’ve put together a list of some Healthy Vegetarian St Patrick’s Day food ideas for Breakfast, Lunch, Snack, and Dinner! Make your food green the healthy way -with vegetables, not food dye! Check out these ideas for naturally green food to serve on St Patrick’s Day!

Breakfast:

Avocado Toast
  • I love avocado toast in the morning! Simply toast your bread, slice some avocado on top and then season it with salt, pepper, and lemon juice.
    • Try adding more fun green toppings like:
      • Goat cheese & chives
      • Garlic & Spinach
      • Honey & Pistachios
      • Lemon & Arugula

Green Smoothie
  • Drink your veggies in the morning by hiding them in this yummy smoothie!
    • Blend together:
      • Handful of Frozen (or fresh) Pineapple
      • 1/2 Frozen Banana
      • 1-2 Handfuls Spinach
      • Handful of Frozen (or Fresh) Mango
      • 1/2 cup coconut milk/coconut water
        • If the smoothie is too thick for your blender/taste, simply keep adding more liquid until you get the consistency you like

  • Healthy (and delicious) green pancakes!

Lunch

Green Leafy Salad
  • Everyone has their go to salad recipes. To make it even more green, try adding a green goddess salad dressing!

Salad Wraps
  • Probably my favorite lunch! Try this recipe for mushroom lettuce wraps that will rival any restaurant!
  • Other good fillings are tofu, or chickpeas!

Broccoli Soup
  • Broccoli soup doesn’t have to be complicated.
  • Simply add a chopped up head of broccoli to large pot of boiling water with salt and pepper. After 5 min when the broccoli is soft scoop it into a blender with a little bit of the boiled water. Blend until smooth and creamy. Add more water if it’s too thick.

Snacks

Veggies & Spinach Dip
  • Great news is there are lots of green veggies!
    • Cucumbers (bonus points if you cut them into shamrock shapes with a cookie cutter!)
    • Celery
    • Snap Peas
    • Broccoli
    • Green pepper (if you slice it horizontally they look like shamrocks!)
  • For the dip, try Spinach dip, Dill dip, or a Spinach hummus!

Kale Chips
  • So easy to make and super healthy!
    • Wash & thoroughly dry 1 large bunch of kale, then remove the middle stem from all the leaves.
    • Spread the kale leaves over a baking sheet, then drizzle with olive oil, salt and pepper (mix to make sure it’s all coated evenly!)
    • Put the kale in the oven at 300 degrees (no need to preheat). Once the oven reaches temperature, turn it off but keep the kale in the oven .
    • After 10 min, flip the kale and mix it around. Then put it back in the oven to cool. Once the oven is cool and the kale is crispy your snack is ready!

Guacamole & Tortilla Chips
  • My favorite snack! Plus you can usually find spinach tortilla chips to fit the green theme!
    • Mash 3 large ripe avocados and mix with a splash of lime juice, salt and pepper for a basic guac
    • Optional add ins:
      • Diced tomatoes
      • Cilantro
      • Minced Jalapenos
      • Minced Garlic
      • Diced Yellow Onion or Red Onion

Dinner

Pasta with Pesto
  • Bonus if you can find spinach pasta (it looks super green!). Cook your pasta as per normal and mix it with basil pesto . I also love adding in peas!

Stuffed Green Peppers
  • This is my favorite stuffed pepper recipe!
  • Optional: I also love adding avocado or guac. on top to really enhance the Mexican flavors of rice, beans, and corn!

Arugula Pizza
  • Arugula pizza/flatbread can have so many flavor combinations. I like using caramelized onions, goat cheese and fig. But I LOVE mushrooms & truffle – it really is a magical combination.

Dessert

Fruit & Yogurt
  • Try mixing green apples, green grapes, and kiwi into yogurt for a yummy, healthy dessert. If your kids need more sweetness add a drizzle of honey.
  • Try adding pistachios for some crunch!
  • Optional: end the night with a fruit rainbow and yogurt cloud! Layer strawberries, orange slices, banana slices, green grapes, blueberries and purple grapes.
